My Furry Valentine
When chocolates aren't an option...
If today is a day to celebrate true love, then today is definitely a day to celebrate Pickle! An easy little treat to whip up to show your furry Valentine how much you love them (assuming that all the silly nicknames and endless cuddles hasn’t already demonstrated this).
4 strips bacon, finely diced
2 cups whole wheat flour
1/3 cup peanut butter
2 tbsp honey
1 handful spinach, finely chopped
1 large egg
1/2 cup water
Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
Place the diced bacon in a medium skillet over medium-high heat and cook until the bacon bits are quite crispy.
Place the remaining ingredients in a large bowl and use a wooden spoon or spatula to stir to combine. Add the cooked bacon and any residual fat from the skillet and stir again to fully combine.
On a lightly floured work surface, use a rolling pin to roll out the dough to about 1/4 inch thick.
Use the cookie cutter of your dog’s choice to cut out as many cookies as you can, then preroll the scraps and repeat until you have used up all the dough.
Place the cookies on the prepared cookie sheet and bake for 18 to 20 minutes, or until the cookies are quite dry and crunchy.
Remove from the oven and transfer the cookies to wire racks to cool before sharing with your furry Valentine.
